January 9. National Apricot day.

An Apricot is a round, sweet and juicy stone fruit, resembling a peach or a plum in taste. It has a yellow-orange flesh, lightly fuzzy skin, and a large seed inside.

For National Apricot day, I have decided to make some thumbprint cookies.

Thumbprint cookies are little shortbread-like cookies with thumbprint indentation, and filled with your favorite jam. My favorite is the raspberry one. But in this case, I have to make it with apricot.
