January 8. National English Toffee day.

Who doesn't like English toffee??
Toffee is made by caramelizing sugar with butter until it reaches the hard crack stage. 
I'm making mine a little bit different today. I started by laying out some saltine crackers on a sheet pan:


and then I made my caramel

To check if the caramel is ready, you can do a cold water test. You basically put cold water in a bowl and then if you drop a little bit of the syrup, they should turn into hard brittle threads.

when the caramel was ready, i poured it over the crackers and quickly spread them out.

And then the chocolate. it melts as the caramel is still hot, so it's easy to spread out evenly.

I left it out on my rack to cool completely, and then I broke them into pieces for everyone to enjoy.
