April 30. National Oatmeal cookie day.

Oatmeal cookies are good, iced oatmeal cookies are better. I was about to go to the store to get some, and then I remembered having these in the pantry from when we went to my in-laws last week!
 
 
 
Oatmeal crème pies! 2 pieces of soft oatmeal cookies with a nice yummy crème in between!
So glad I have these! Not only did I save money, but my tummy is also happy! haha!

April 29. National Shrimp Scampi day.


Shrimp scampi is a dish where you cook shrimps in garlic, butter, and white wine.

I used a whole head of garlic. Lots and lots of garlic is goooooood!

Two pounds of shrimp.

Sautéed them in a lot of butter, a lot of garlic, and some white wine.. Shrimp scampi for dinner!!!

April 26. National Pretzel day.

We went to my in-laws today to hangout by the pool and for the kids to play, and see their aunt and grandparents. My sister was babysitting her friend's son today so Kaiden and Bailey had another friend to play with! We played in the pool, made brownie pops, watched Cars the movie, and we made Pretzels!!
 
They had fun mixing the dough. My kids like to help when I'm baking and cooking at home so it's always fun for them.
 
Yuuup. They had a little too much fun. Flour everywhere! the table, their hands, clothes, and faces!
 
It was so cute how they all had their own little chairs and iPads. Ipad club meeting?? hahaha! They sat there and watched tv and played with their ipads while waiting for the pretzels to bake.

 
I did the kneading and all that. I then rolled them out into long strips and gave it to them to form whatever shape they wanted. Kaiden made a K and a square, Daniel made a D and a heart, and Bailey made a B (not in the picture) and grandma helped her make the small pretzel shape.
 
They turned out pretty good! We made apple cinnamon oatmeal ones. yum!
Pretzel day sure was fun!
 
Now I'm really tired and need to go to bed! ha! Goodnight everyone!

April 25. National Zucchini bread day.

Zucchini bread. Sounds gross? Not really. I loooove zucchini, and yes it is made up of vegetables. But it's just like a carrot cake, if you think about it. Made with vegetables but so good!

My stuff is a mess so I couldn't find two loaf pans of the same size so I used these two.

 
My zucchini bread was moist and soft and oh-so-yummy! I don't think it will last very long! We ate it while it was still nice and warm. Everyone likes it!

April 22. National Jelly bean day.

Jelly beans are a type of candy primarily made of sugar, with a hard candy shell and a gummy interior. They come in lots of different colors and fruity flavors.
 
We still had these black jelly beans in our jar from my daughter's Birthday party mixed with some malted balls. We had a Minnie mouse themed party that's why we had black and white candies.
I really don't know what flavor these are but the kids like them!
 
 

 
Anyways, it's my uncle's Birthday today so we get to go out to dinner and dessert tonight! yay!

April 20. National Pineapple upside-down cake day.

I hung out with my friend at her place tonight and like we always do, we got a bunch of junk food and ordered Chinese for dinner. So since I wasn't able to make the cake from scratch today like I'm sure you all are expecting, hehehe.. I got this at the store.


Thought maybe since it's made by dole then it should be good.

It came with two individual servings inside. It's really easy too, you just have to heat it up in the microwave for about a minute and a half, flip it over, and voila!

The cake was nice and moist, you wouldn't even think it was frozen.
I highly recommend you all try this, it is ah-mazing!! I need to go get some more!!

April 18. National Animal crackers day.

What kid does not like animal crackers?? I should've looked at my list and known that today was animal cracker day. I looked in the pantry and this was all that we had left in the jar! Guess I need to go get some more!
 
 
 
And yes, this is my daughter's bowl. Her Minnie mouse bowl. Good thing her brother wasn't home when she ate these or I would've had to deal with them arguing over 10 pieces of crackers. ha!

April 17. National Cheeseball day.

Cheese balls. One of my son's favorites. He loves Cheetos and anything like it so he was happy with the challenge today. I was going to get a tub of cheese balls at the store but then I just decided to get a small bag at the Asian store. Good decision, or my kids would be eating cheese balls for breakfast, lunch, and dinner for days. haha
 
 

 
But of course my sons decided to eat it in the car and I was not able to take pictures because my phone died!! Well you can just imagine the empty bag and the cheesy fingers and mouth!

April 16. National Eggs Benedict day.

Eggs benedict. My favorite breakfast food ever. English muffins topped with Canadian bacon, poached eggs, and hollandaise sauce. Oh-so-good!!!

But who said you can only eat it for breakfast?? I made them for dinner tonight!

Remember my glazed ham from yesterday? I used that instead of Canadian bacon. I mean, why buy Canadian bacon when I still have some good ham right?

Best part of the eggs benedict is the hollandaise sauce. I like mine swimming in it. hehehe

We had some white bread so since I had big slices of ham, I just used regular white toast.

Eggs benedict for dinner!! White toast, fried glazed ham, 2 poached eggs, and lots and lots of hollandaise sauce! My tummy is happy!

April 15. National Glazed Ham day.

I couldn't afford to get a whole glazed ham, so I just got glazed slices of it.
 

These are nice thick juicy slices. Yummy yummy!

Cut them up and fried them a little..

And cooked them in mac and cheese!
I served it with my homemade focaccia bread and the hubby was happy for his dinner!
Yay for glazed ham day!

April 14. National Pecan day.

Pecans are one of my favorite kinds of nuts. I love hazelnut and pecans. Here at home we like my candied pecans. I was going to make some and then I remembered we had these! Kaiden had a fundraising thing at school where we had to sell a lot of chocolate boxes. We got a bunch for ourselves too, they're actually pretty good! We had a lot of the plain chocolate covered pecans but those were so good they didn't last very long. We still had a box of the clusters, or turtles. These were really good too!

April 13. National Peach Cobbler day.

Cobbler is made from a fruit or savory filling baked with a crust on top. It is usually served warm and is definitely amazing with ice cream on top.
 
 
To be honest, we got this and didn't get to eat it tonight because we forgot to get the ice cream. So it will sit in my freezer until someone remembers to get the ice cream!! hehehe

April 11. National Cheese fondue day.

Cheese fondue. Melted cheese. Food on skewers. Fun. Probably my favorite challenge yet. I had fun making this one!! Fondue is a pot with melted cheese that is eaten by dipping food that are on sticks. You can dip anything you want. Fruits, meats, bread, I'm sure whatever you come up with will be good. I mean, it's cheese. Anything will be good with melted cheese don't you think so?

I just made the classic with sharp cheddar cheese.

To make it even more fun, I got a big piece of round shaped bread, cut the top off, and hollowed it out. You guessed it right, I used this for our bowl instead of a regular fondue pot/bowl!

I cooked some roasted garlic reds.

And of course we had to have beef. Beef and cheese! yay!

Granny smith apples go well with the cheese. A sweet and salty combo. It is very, very tasty.

I also cooked some pieces of chopped chicken tenders. To make it a little bit easier on me, I just used shake and bake to cook them.

Our dinner for tonight! My awesome cheese fondue platter!

Oh and remember the top of the bread that I cut off? I chopped it up and included it in my platter!

Try it for dinner or lunch or whatever sometime! It's fun and really yummy!
It's also a good way to get rid of leftovers in the fridge!

April 10. National Cinnamon crescent day.

Cinnamon crescents. Mmmm... Crescent rolls are good. Cinnamon rolls are yummy. Put them together = oh so good!!

 
I know I know.. I was supposed to make them crescent shaped. I made twists instead. I don't know what I was thinking haha but they're still made from crescent rolls!

April 8. National Empanada day.

An Empanada, or pastel as they call it in other countries, is a piece of dough stuffed and then either baked or fried. It can be filled with pretty much anything. meats, cheeses, fruits, etc.

I wanted to make some chicken curry tonight so I just made some with ground chicken and used that to make my empanadas!

Spicy, saucy, and currylicious!

I transferred it onto a strained to drain the juices. You don't wanna put something saucy in your empanada 'cause it will seep out and make your empanadas soggy.

Whatever you make, save the sauce! You can serve the empanadas with it later on, some people may want to dip theirs in the sauce for more flavor!

I made little ones. The size is just right. I don't like making big ones because it gets wasted when you can't finish a whole one. So small ones are better!
