National Carrot cake day! Not a lot of people like carrot cake. Maybe 'cause of the "carrot" part? 'Cause they just think, vegetable cake, and it sounds gross? Well, I like carrot cake. It actually has more cinnamon flavor than carrot, really. It's nice and simple, and the cream cheese frosting just makes it taste so much better! Have you tried making it with pineapple chunks? I didn't have any so I wasn't able to put some in mine. But try it, it's goooood!
Freshly baked cake! Trimmed the top off, cut it in half, and left them on the cooling rack to cool completely.

I ground up some walnuts and garnished the side of the cake and left it plain and simple.

I'm sorry to hear that you are sick. I've heard that eating cake extends an illness to please feel free to send any leftover cake with Ben tomorrow so he can share. Carrot cake is one of my favorite cakes.
