February 1. National Baked Alaska day.

Baked Alaska is  flambe'd or baked Meringue filled with ice cream and a layer or layers of cake or pie crust. Meringue is made from whipping egg whites and sugar. I, personally don't like using raw eggs in my desserts so instead of the egg whites, I use this:

It tastes so much better and it's safer! No raw eggs!


I used my homemade lemon pound cake for my base and then topped it with a layer of Birthday cake ice cream. The combination might sound funny to you, but it actually tastes amazing. Together, it had the perfect tartness and the sweetness. Perfect combo, I should say.

This is what it looked like inside. 

It took me forever to make this today too 'cause I, for the love of God, could not find my torch anywhere. I went to a bunch of different stores and none had it. So finally when my husband came home, he went to Home Depot with me. I actually went there earlier and the person I asked said they did not have it...and they did!! Thanks to my husband for knowing where to find it! 
And to that person who told me they didn't have it,
YOU'RE FIRED!
